Spicy Black Bean Soup
1 finely chopped onion 4 minced garlic cloves 1/2 tsp red pepper flakes 1 tsp ground cumin Three 15-oz cans black beans, undrained 14 1/2 oz fat-free chicken broth 10 oz canned tomatoes with green chilies 11 oz canned yellow corn, drained
Spritz bottom of large pot with cooking spray. Saute onion and garlic about 5 minutes until translucent.
In blender, blend one can of beans, onion mixture and spices. Pour back into pot. Now blend another can of beans and broth. Pour into pot.
Now you're done with the blender. Do not blend the next items: Just pour third can of beans, tomatoes and corn into pot.
Simmer over medium heat for 25 minutes.
